The wines
In keeping with the great tradition of the Sauternes and Barsac appellations, the Château Coutet vineyard is planted with Semillon, Sauvignon Blanc and Muscadelle grapes.
The harvest stretches from September to November, involving thirty to forty days of hand-picking in successive passes through the vineyard to ensure that the grapes are picked only when they have all the required characteristics.
Each precious batch goes through the press, a decisive step for extraction, and is then barrelled for the next step: fermentation. The barrels are laid down the length of the barrel hall, then comes the long period during which the wine matures. When the time comes for blending, old cellar-masters return to the estate, sharing and passing on their memories of taste, time and place to the current team.
